Dryfruit Bar with Pumpkin ๐ŸŽƒand Sunflower ๐ŸŒบ Seeds

INGREDIENTS
1 Cup dried figs, washed and cut into small pieces
1 Cup dates, washed and cut into small pieces
1 Cup dried apricots, washed and cut into small pieces
1 Cup pumpkin ๐ŸŽƒ seeds
1/2 Cup sun โ˜€๏ธ flower seeds
1 Cup jaggery, cut into smaller pieces
1/2 Cup vegan butter or shortening

METHOD
Heat up the butter/shortening in a saucepan medium heat
When it starts to melt, put in the jaggery and stir constantly until until everything melts together into a bubbling liquid
Put in all of the remaining ingredients and stir constantly for 5 minutes or until all of the dried fruits soften and soak up the liquid
Turn off the stove and let it thicken (once thickened, it will not stick to your hand or the pan)
Then put all of the mixture on wax or parchment paper and roll with a rolling pin until it is approximately 1 inch thick
After rolling, it will look like this.

Let it cool and cut into pieces, like this.

You can wrap it in wax paper and keep in the refrigerator up to 4-6 weeks

It is good for breakfast or as a snack at any time of the day or after dinner for ๐Ÿฎ dessert ๐Ÿจ. Also a healthy snack for kids.
