INGREDIENTS (for spinach flavoring):
6 oz packet of fresh baby spinach (organic is better)
salt to taste
juice from 1/2 a fresh lemon or lime (or to your taste)
1 green chili (optional)
2 garlic cloves (optional, not used in pictures)
1/2 teaspoon cumin seeds
1/4 teaspoon turmeric
INGREDIENTS (for dough):
1 cup corn flour
1/2 cup amaranth flour
1/2 cup chickpea flour (besan flour)
salt to taste
1 teaspoon crushed cumin seeds
1/4 teaspoon ajwain seeds
1/4 teaspoon turmeric
2 tablespoons corn oil or canola oil
METHOD FOR SPINACH FLAVORING:
- Wash the spinach well and set to side. Put water, salt and 1 tablespoon of lemon juice in a large pot to boil. Once it is boiling, add the spinach and mix it. Cover the pot and cook for 1 minute. Then, add in ice cold water and let it sit for another 2 minutes. After 2 minutes, strain the water and keep the spinach.
- Put the spinach, green chili (optional), garlic cloves (optional), cumin seeds, and turmeric. Blend them together until smooth.
This is the flavoring. Adjust the salt and lemon juice to your taste.
- Mix the flour, salt, cumin, ajwain seeds, turmeric, and oil. Add half the spinach mixture and mix well. Slowly add more until it forms a nice dough. (Don’t add all the spinach at once otherwise the dough will become very loose)
This is the dough when it is finished.
- Put a little more oil on the dough and knead for 2 minutes. Then cover the dough and let sit for 1/2 an hour. Knead a little bit more and then separate into even sized balls (about the size of a golf ball). Spread some flour on a wooden board and roll each piece until 1/8 inch thick. (Note: these are gluten free, so you have to be patient and roll slowly so they don’t break)

Put a non-stick pan on stove over medium-low heat and let the bottom get hot. Put the rolled dough on the pan and let it cook for 25-30 seconds before turning it over and cooking for another 25-30 seconds. Flip over again and press with a spatula and slowly they will become a little bit fluffier. Both sides are done when they are golden brown.
