INGREDIENTS
4 small oranges with thinner skin
1 cup sugar
3 cardamom pod
Juice from 1/2 fresh lemon
pinch of salt
METHOD
1: Wash the oranges and chop into very small pieces. This should equal one cup.
2: Using a pressure cooker, put the oranges in a smaller pot. Add two cups of water in the pressure cooker. And then add two cup water in the oranges,insert the smaller pot containing the oranges. Close the pressure cooker.
3: On high heat, let the pressure cooker heat up and whistle four times. Turn off stove and let the steam naturally release.
4: Once it is safe to open, open the lid and remove the smaller pot with the oranges. Then add one cup sugar, cardamom, salt and squeeze the lemon in, mix well with a wooden spoon. Repeat the same process with the pressure cooker and cook for three whistles and naturally release the pressure.
5: When it is safe open the lid, take out pot with oranges,and mix all well, as it get cold it will thicken up. The marmalade is ready to serve. You can store the marmalade for two weeks in the refrigerator.
