INGREDIENTS
4 pics gluten-free tortilla / you can use corn, chickpeas, or spinach. You can buy from the grocery store
1/2 cup shredded tofu of any kind
1/2 cup wash and shredded broccoli
1/2 cup wash and shredded carrots
1/2 cup wash and shredded zucchini
1/2 cup yellow moong dal (optional)you can buy from the Indian grocery store or some time you can find in Wholefood grocery store
2 tablespoon fresh lemon juice
1/4 teaspoon ajwain seed
1 teaspoon oil corn or canola or your choice
Some oil corn or canola /or your choice ( just brush the pan)
salt to taste
1/2 cup mass avocado with fresh lemon juice, salt, and a pinch of fresh ground black pepper to your taste
METHOD
1:Put a nonstick pan or whatever you use on the stove low heat, add 1 teaspoon oil in, let get hot then add ajwain seed in and let them fry for 5 seconds, it will nice aroma comes then add all veggie and tofu, add salt, lemon juice and mix all well and let cook 3 to 4 minutes. They all become a little soft but crunchy, take them out in the bowel and keep them aside.
2: if you using moong dal then let’s make it.
INGREDIENTS FOR MOONG DAL
1/2 cup moong dal
3/4 tablespoon oil corn or canola or your choice
1/8 teaspoon turmeric
1/2 teaspoon red chili pepper powder
1/4 teaspoon cumin seed
1/4 teaspoon muster seed
salt to taste
METHOD FOR MOONG DAL
1: Wash moong dal 3 or 4 times, then soak the dal for half an hour, then put the pan on the stove medium-low heat, add oil in the pan, add cumin seed and muster seed, let them cook for a few seconds until nice aroma comes, then put dal in the strainer and let all water come out, wash with fresh water and add dal in the pan. then add turmeric powder, red chili powder, and salt to taste, mix all well add 1 cup water mix and cover halfway, and let cook on medium-low heat for 7 to 10 minutes keep and stir in between so it doesn’t get to stick on the pan, check with your finger it gets press easily then it ready, you think it needs more water then you can add little when it gets ready then take out in the bowl and keep aside until you ready to use.

3: Put the pan on the stove low heat, brush with oil, put one pice tortilla in the pan, and let get a little warm from both sides,
4:Put tortilla on cutting board, cut from one side 1/2 way, then spread avocado all around, then add some veggie stuffing on one side may be about 1 1/2 tablespoon, then fold the cut side (you can see in picture ) then add moong dal other side, then fold, (you can see in top picture ) then one side left just fold without stuffing, it will become nice tryingly sandwich.
5: Now in same pan just brush little oil, and grilld a little triangles sandwich until it becomes nice and golden, both side it is nice and crunchy out side and nice and juicy in side.
