INGREDIENT
1 cup uncooked quinoa that should be cooked using the instructions on the box/bag
1/2 cup (sprouted chickpeas using sprouted chickpea recipe from Veganrasoi.com)
3/4 cup cabbage / or any vegetable of your choice washed and finely chopped
3/4 cup of combined bell peppers, wash and finely chopped
1/4 cup coriander/ or cilantro leaves wash and finely chopped
1/2 teaspoon turmeric powder
1 teaspoon cumin seed
1 tablespoon fresh lemon juice
2 tablespoon oil corn or canola / or your choice
salt to taste
METHOD
1: cook quinoa using instructions from the box or bag, when you cook them at that time add 1/4 teaspoon turmeric powder and salt to taste. When it is ready keep it aside.
2: Put the pan on stove medium-low heat, add oil, cumin seed and mix all well, let cumin seed caracal, then add all your veggies with a pinch of turmeric powder, add chickpeas sprout and add salt to taste mix all well and let cook 3 to 5 minutes. When it looks a little soft, then they are ready, It has to be tender and crunchy, turn the stove as low as you can.
3:Now add quinoa to the cook veggies, add lemon juice and half of the coriander leaves mix all well and, let cook for one minute, on very very low heat then turn the stove off. Garnish with leftover coriander leaves, and serve hot.
