Silky Tofu Smoothie

INGREDIENTS:

1/4 cup silky tofu

1 cup baby spinach (washed)

2 tablespoons pumpkin seeds (you can substitute this for almonds if preferred)

6 pieces of date

1/2  a medium-sized apple

1/4  teaspoon cardamom powder

water

ice (optional)

1 tablespoon pomegranate seeds, for garnish

METHOD:

  1. Wash the dates and soak them for 30 minutes.

  2. Put all ingredients in a blender. Tofu, spinach, pumpkin seeds, dates with the soaked water, apple, cardamom powder, a tiny bit of water, and some ice. Blend together until smooth.

  3. Pour smoothie into a glass(es) and garnish with pomegranate seeds.
