SMOOTHIE WITH CUCUMBER AND CARROT

INGREDIENTS:

1 fresh, tender cucumber, washed and cut into small pieces

1 fresh, small carrot, washed and cut

1/2 ripe mango, peeled and cut

1 tablespoon pumpkin seeds

1 cup water

3/4 cup ice

3 pieces of dates (optional, as a sweetener, if mango is not sweet enough)

METHOD:

  1. Put cucumbers, carrot, mango, pumpkin seeds, and water in blender. Blend well. Add in ice and blend for 1 minute. Taste. If it isn’t sweet enough, add dates and blend. You can serve immediately.
