INGREDIENTS
1 cup kidney beans wash and soaked over night ( or if you use from can that ok to )
1 cup cooked quinoa ( cook them according to the directions on the packet )
1/2 cup besan flour (aka chickpea flour)
1 cup shredded zucchini ( washed )
1 cup finely chopped spinach/or cabbage (washed )
( You need a total of 2 cup vegetable so you can use any vegetables you like)
1/4 cup coriander leaves/ or cilantro, wash and finely chopped
1 teaspoon cumin seed
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder ( optional)
2 tablespoon fresh lemon juice
1/2 cup oil corn or canola / or your choice
salt to taste
METHOD
1: First cook the washed, soaked beans in a pressure cooker or Instapot as per directions. In a pressure cooker, add beans, water to over all the beans (3-4 cups), 1/2 teaspoon salt, and close the lid of pressure cooker. On high heat, let the pressure cooker whistle blow 4 times. Turn off the stove and do not open until all the pressure is release naturally.
2:Cook quinoa as directed on the packaging, When is safe to open, open cooker lid take out beans. Wash the beans in a strainer.
3: In a bowl, mix beans ,quinoa, vegetables, besan flour, cumin seeds, turmeric powder, lemon juice ,red chili powder, coriander leaves and salt to taste ( be careful we put salt when we cook beans)
4:Mix all well with your hand ( don’t mix to much). Using tablespoon, scoop out mixture and roll them into 6 balls.

5: Flatten to 1 inch thick patties with a little oil on your hands.
6:Heat a non-stick pan on stove medium low heat. Let the pan get hot then add 2 tablespoon oil. Place the patties in the pan and let it cook for 5-7minutes then turn over. Let it cook another 5-7 minutes until they are golden brown on each side.
Look here our patties are ready to eat
Note: This are very healthy and tasty, packed with good protein and fiber. It is vegan, gluten free, dairy free, nut free.You can make delicious sandwiches with gluten free bread, or eat with this delicious chutney or tomato ketchup.
