INGREDIENTS (4-6 servings):
1/2 head of cauliflower (2-3 cups), washed and cut in small pieces
2 cups of organic peas, frozen or fresh
1/2 orange bell pepper, washed and cut
1/2 yellow bell pepper, washed and cut
1/2 orange bell pepper, washed and cut
3 medium sized potatoes 🥔, washed and cut into cubes
1 medium size Indian sweet potatoes 🍠(slightly pink with a white flesh), washed and cut into cubes
4 medium size tomato 🍅 washed and chopped
2 cups of cilantro leaves, washed and chopped
Juice of a 1/2 fresh lemon 🍋
1/2 cup oil, corn 🌽 or canola
4 cloves
3 one-inch pieces of cinnamon sticks
3 dried red chili peppers
7 fenugreek or methi seeds
5 curry leaves
1 1/2 teaspoons red chili 🌶 powder
1 teaspoon turmeric powder
11/2 teaspoons gram masala
2 teaspoons whole cumin
1 tablespoon ginger garlic paste ( optional)
1 teaspoon ajwain/carom seeds
1/2 cup water
salt to taste
NOTE: IF YOU DECIDE TO USE A PAV BHAJI MASALA PACKET INSTEAD OF FRESH MASALA, PLEASE DO NOT USE ANY MASALA PACKETS WITH HING, SINCE HING CONTAINS A WHEAT BASED EXTRACT AND IS NOT ALLERGY FRIENDLY
METHOD:
1. Steam all vegetable in steamer ( you can do in pressure cooker) with a little salt. See this video for steaming vegetables.

If you cannot steam then, then boil the potatoes and cauliflower first for 6 minutes and add the bell peppers and peas for the remaining 4-6 minutes until they are all soft and can be mashed.
- Let them cool 15 to 20 minutes, then mash the vegetable with a potato masher or heavy spoon. It will look like this.
- In a deep pan, heat oil on medium high. Once hot, add cumin, fenugreek seeds and ajwain seeds and let them fry for 5 seconds.
- Then add cloves and cinnamon sticks and let fry for 10 seconds.
- Add red chili pepper, let fry for 2 seconds.
- Add curry leaves, let fry for a dew seconds and mix well.
- Add tomatoes along with the red chili powder, garam masala and turmeric powder. Add 1/2 cup water and let it cook for 5-8 minutes until the tomatoes liquify.
- Add the mashed vegetables and mix well. Add salt and half of the cilantro leaves, mix well. If its too thick, add some water.
- Add lemon juice and garnish with remaining cilantro. Serve warm.
It is delicious served with gluten free bread grilled in olive oil or dairy free butter like Earth Balance brand.
