you can use some different gluten-free flour for batter, pancake mix, or some rice and chickpeas flour or idli batter.
INGREDIENTS
1 medium sweet potato, wash and shredded
1 medium carrot, wash and shredded
a hand full of spinach wash and finely chopped/ or hand full shredded cabbage
1/2 cup rice flour
1/2 cup chickpeas flour,/or 1 cup pancake flour
1/2 teaspoon baking powder
1 Piece of green onion wash and chopped finely
1 tablespoon fresh lemon juice
1 teaspoon cumin
2 tablespoon oil corn or canola,/or your choice
1 green chili pepper wash and chopped finely( optional if you like spicy)
salt to taste
METHOD
1: Mix the flour, take bowel mix rice and chickpeas flour in, add baking powder and salt to taste, if you using pancake flour then don’t add baking powder. Add water little by little and make it batter just like a pancake, and cover with a dish and keep aside.
2: Put the nonstick pan on the stove medium-low heat let get hot, meanwhile add all veggies in batter and lemon juice, cumin seed, green chili, salt to taste ( remember we add some salt in batter), mix all well then add half oil in the pan, then from the mixture make a shape like has brown and put in the pan and cover the pan, let cook on low heat for ten minutes.
look in the pan they are cooking.
3: Put little oil on the has browen, then turn over and let cook for ten minutes, or they get nice and golden browen both side then they are ready to eat.
Look this ours has browen is ready to eat, serve hot with ketchup or hummus,they very easy to make and delicious to eat it is very healthy, children love in there lunch box too.
